Granola Stuffed Pears

Sweet, tender pears get a festive upgrade with a warm, crunchy granola filling. A simple yet elegant treat for cozy nights and holiday gatherings.๐Ÿ

Ingredients:

  • 4 ripe but firm pears
  • 1 cup Classic Granola (try it with Original Coconola or Gluten Free Honey Nut Granola!)
  • ยผ cup chopped pecans
  • 2 tbsp maple syrup
  • 1 tbsp melted butter
  • 1 tsp cinnamon
  • ยฝ tsp vanilla
  • ยผ cup dried cranberries
  • ยฝ cup apple cider or water

Instructions:

  • Preheat oven to 375ยฐF.
  • Halve pears and scoop out the cores, creating a small cavity.
  • Combine granola, pecans, maple syrup, butter, cinnamon, vanilla and dried cranberries.
  • Spoon the mixture into each pear half.
  • Place pears in a baking dish and pour cider or water around them.
  • Cover loosely with foil and bake for 20 minutes.
  • Remove foil and bake another 10โ€“15 minutes, until pears are tender and the topping is golden.
  • Serve warm with whipped cream, vanilla ice cream or yogurt.
