Classic Granola Apple-Pecan Pie

Ingredients:

For the crust

  • 1½ cups Classic Granola (try it with Gluten Free Honey Nut Granola or Original Coconola too!)
  • ½ cup all-purpose flour
  • ¼ cup brown sugar
  • 5 tbsp unsalted butter, melted
  • 1 tbsp maple syrup
  • ¼ tsp salt

For the filling

  • 5 medium apples, peeled, cored, and thinly sliced
  • ½ cup pecans, roughly chopped
  • ⅓ cup brown sugar
  • 2 tbsp all-purpose flour
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • Pinch of salt

For the topping

  • ¾ cup Classic Granola (try it with Gluten Free Honey Nut Granola or Original Coconola too!)
  • 2 tbsp chopped pecans
  • 1 tbsp brown sugar
  • 2 tbsp melted butter

Instructions:

  • Make the crust: Preheat oven to 350°F. Pulse Classic Granola in a food processor until it resembles coarse crumbs.
  • Mix granola crumbs with flour, brown sugar, melted butter, maple syrup, and salt until combined.
  • Press firmly into the bottom and sides of a 9-inch pie dish. Bake for 10 minutes, then set aside to cool slightly.
  • Make the filling: Toss apples with pecans, brown sugar, flour, cinnamon, nutmeg, lemon juice, vanilla, and salt.
  • Spoon the apple mixture into the crust, arranging the apples evenly.
  • Make the topping: Mix Classic Granola, pecans, brown sugar, and melted butter. Sprinkle evenly over the apples.
  • Bake for 40–50 minutes, until the apples are tender and the topping is golden brown. If the topping starts browning too quickly, loosely cover with foil.
  • Let cool for at least 20 minutes before serving. Enjoy your pie!
